Weekend recap and Sunday Meal Planning

Hi there!

Wow!  What a fun, whirlwind weekend we had.  Where to begin… Let’s start with Friday night.

As I mentioned, the hubby and I turned off our computers, the T.V., and our phones for a little tech-free at home date night.  Once the Love Nugget was fast asleep, we opened a yummy bottle of Grenache/Temperanillo that we’ve had for a few years.  It was just as good as when we tasted and bought it!  Alongside that we enjoyed some dates stuffed with goat cheese and topped with walnuts.  Yum!

For dinner, we grilled up some salmon and zucchini.

After the event, I came home to take a quick shower and change to head to a little farm stand that Auntie Gigi told us about.  Since it was a little too late to make it to the farmer’s market, we figured we could get some farm fresh produce there.

It was a cute little property called Garden Jewels.  It has an open vegetable stand in the front that opened to a beautiful garden, complete with two ponds and chickens!

They had lots of tomatoes so we bought a flat to use for tomato sauce I’m going to make and freeze this week.  Yum!They were setting up for their monthly garden dinner where everything is cooked using their farm fresh produce.  They add chicken and beef and you bring a fancy plate, utensils and your beverage of choice.  It sounds and looks like so much fun!

After going to the Rack to look for golf shirts for the hubby (he is addicted to golfing lately!), we made a stop by Whole Foods to pick up our race packet for Sunday morning.  Then it was home to change (again), rest for a quick second before heading to the local baseball stadium and the hubby’s work bbq.  The past few years his company has rented out a large, private picnic area and they serve dinner, drinks, and snacks.

It’s really nice because there is a huge lawn area below the a seating for the kiddos to run around and play.

The Love Nugget had a blast!

After the race they served some fruit, granola, yogurt, and oatmeal for breakfast.  I’m liking the Whole Foods runs!

We made a stop by the playground before heading to the grocery store for our weekly shopping trip.

It was nice to get home nice and early with the grocery shopping all done.  The Love Nugget (exhausted from last night), went right to bed while the hubby and I cleaned, painted and finished meal planning.

This week our meals will be;

Sunday – Pizza (splurging!)

Monday – Spaghetti Squash Tomato Bake

Spaghetti Squash and Tomato Bake

Tuesday – BBQ chicken and veggies

Wednesday – Halibut with mango, avocado salsa and Gorgonzola, Pear Salad

Thursday – Shrimp and Tofu Spring Rolls with Peanut Sauce

Friday – Brie and Granny Smith Apple Turkey Burgers with Sweet Potato Fries

Saturday – Birthday Party

Sunday – ????

The Love Nugget just woke up from a 3 1/2 hour nap!  Must be nice to party all night and sleep all day 😉

  1. It sounds like you had a fun-filled, busy weekend!! Date nights at home are the best; my husband and I are due for one! I love the stuffed date idea…I’ll have to try it. Also, the spaghetti squash casserole dish sounds delicious! I think I might add that into our meals for this week!
