What I ate Wednesday

Hi guys!
Happy Wednesday to you all.  It’s once again time for What I ate Wednesday with Jenn over at Peas and Crayons!

Spooky Snacks and Healthy Halloween Treats

Breakfast today was my newest pumpkin obsession.

Overnight pumpkin oats

1/2 cup old-fashioned oats

1 tbsp hemp seeds

2 tbsp pumpkin puree

2 tbsp non fat greek yogurt

1/2 tsp pumpkin spice

1/4 cup almond milk

1 packet stevia or sweetener of choice

Mix all ingredients in a bowl.  Pop it into the fridge overnight then enjoy in the morning topped with bananas, chopped walnuts, chopped pecans, or a heaping spoonful of nut butter!

No joke it’s like pumpkin pie in a bowl but healthier!   I enjoyed mine with a glass of fresh kale and apple juice.

We don’t have a juicer so I used my ninja which worked but was a process!  I really want to get a juicer because it turned out really tasty and the Love Nugget like it too!

Snack was a fitmixer chocolate slim shake on the way to a Halloween play date that I forgot to snap a picture of before I guzzled it down.  That stuff is good!

The Halloween get together was lots of fun!  It was a small group of boys all around the same age.  They dressed in their costumes for a little bit…

The Love Nugget won’t leave a hat on his head so the costume selection was minimal.  I decided he would be a “mini marathoner” last week and it turned out pretty cute.  You can’t see his legs but he has on tube socks and his Nike’s.  He left the head band on for a few photos too 🙂

While we were there I snacked on some veggies and a Basil Sun-dried Tomato Hummus that I made.

My friend Courtney had such a cute set up for the get together.  She made the most adorable monster cupcakes and had an awesome Halloween spread set out.

This afternoon I shared an apple and some of this yummy dip with a spoonful of pumpkin puree added to it.

I’m obsessed with the Organic Fuji apples that Costco sells.  I know, with all the local farms I should buy from them but they are just so big and juicy!

Tonight for dinner we had a healthy, fast and simple meal.

Tilapia won ton tacos with a side of sauteed organic baby kale.  Yum!

A little later I enjoyed half of a Quest Crave Peanut Butter Cup.

These things are really tasty, and have 21 grams of protein!

QUESTION – What is your little one dressing as for Halloween?  If you don’t have kids, what’s your most memorable Halloween costume? 

When I was three my mom dressed me as a bunch of grapes.  I literally had purple balloons taped all over my body and couldn’t sit down all night!

  1. Okay, you need to share that hummus recipe- it sounds DELISH!!! And I love that he was a little marathon runner! Adorable!!! One of my favorite costumes was when I was Minnie Mouse- my mom always got creative and used what we had for our costumes, and this particular one happened to be my jammies. I was like 3, so it was totally acceptable and ADORABLE. Paired with my little black mary janes and some black paint on my nose and some ears from Disneyland- it was pretty cute!

    • That Minnie Mouse costume sounds so cute! I thought about having the Love Nugget be Mickey since he loves him but again with the head thing. Nothing stays on for too long! I’ll post the hummus soon! It’s really yummy and extra healthy 🙂

  2. All of your eats look so good! Can’t wait for the hummus recipe. Love the little marathon runner idea….that’s great! My little one is going to be a witch. She’s been a princess for 3 years in a row and now at 6, she thinks she’s too old for princess stuff. 😉

  3. Keenan is going as a Fireman. He practically wears his costume everyday, so we will definitely be ready for Halloween!

  6. Oops! Just saw that you posted the dip. I’m definitely going to check it out. I love pumpkin oats! I’m trying to cut back on them so I don’t get tired of eating them before the season’s over 🙂

  7. Those frankenstein cupcakes are just the cutest things ever! I might make something like that for my youngest sister’s kindergarten class!
