It’s beginning to look a lot like…Fall!

Good morning!

I have officially jumped on the “pumpkin” bandwagon.  I mean, I’ve always loved pumpkin things, especially during the fall season.  However this year I feel like I’m pumpkin obsessed!  It might be due to the fact that for a few weeks I could only find pumpkin puree in the extra large containers which meant I HAD to use it all once it was opened.  It also have something to do with the wonderful cooler temperatures we’re enjoying this week.  Finally Fall weather has arrived!  Today I’m going to share a few pumpkin recipes that we’ve been loving around here.

Every year at the first sign of fall, I bust out my favorite baking dish.

I love making pumpkin bread in this muffin/bread pan!  My favorite recipe is full of sugar, vegetable oil, and is oh so delicious.  But… since keeping in the spirit of healthy eating, I decided to create a much healthier version of my favorite fall bread.

Whole Wheat Pumpkin Bread

1 3/4 cups Whole Wheat Flour

1 tsp baking soda

1/2 tsp baking powder

1 1/2 tsp pumpkin pie spice

1/2 tsp salt

1 1/3 cup pumpkin puree

3 eggs

2 tbsp coconut oil

1/4 cup applesauce

1 tsp vanilla

2 tbsp honey

1/4 cup 100% pure maple syrup

These can be made as muffins or bread.  Either way, spray the pan you use with cooking spray and preheat the oven to 350 degrees.

In a large bowl, sift together the dry ingredients.  In a separate bowl, combine the wet ingredients adding the coconut oil last.  Add the dry mixture to the wet mixture and combine well.   If baking muffins, cook for 30-35 minutes then check to see how their progressing.  If a toothpick or knife comes out clean, they are done.  If using a loaf pan, cook for 40-45 minutes then check the same way.  A loaf will take longer than the muffins.

We enjoy these with pumpkin cream cheese which I forgot to snap a picture of.  I mix 1/2 a block of cream cheese with 2 tbsp of pumpkin puree, a little bit of honey or maple syrup, and 1/2 tsp pumpkin pie spice.  Use an electric mixer to blend well then enjoy on top of your muffin or bread 🙂

Then there’s these little balls of goodness… yum!

Pumpkin Pie Protein Bites

1 1/2 cups old-fashioned oats

1/4 cup + more if needed organic all natural peanut butter (any kind of nut butter would work, pecan would be really yummy!)

1/3 cup 100% pure maple syrup (you could also use honey or agave)

1/4 cup pure pumpkin puree

1/2 scoop Fitmixer Vanilla Protein Powder

1/4 cup chopped raw walnuts

1 1/2 tsp pumpkin pie spice

1 tsp vanilla

1/4 tsp sea salt

Place all ingredients in a large bowl or stand mixer and stir until a sticky batter forms.  It should be wet enough to form into balls without falling apart.  Form into 24 bite size balls and store in the fridge until ready to eat.  Taste like pumpkin pie!

Along with pumpkin flavored food, we’ve just been in an all around Fall mood over here.  Yesterday I made the Love Nugget some pumpkin play dough to enjoy, then he painted a pumpkin.

It was messy, but fun.  It turned out pretty cute too!

Super easy too.  Just add tape to the pumpkin you are using.

Then use a sharpie to draw whatever you would like your cut out to be.  A letter, word, or design.  Use an exacto knife to cut the outline of your shape then peel away the outer tape.

I used poster paint mixed with a little bit of dish soap.  I wasn’t sure if it would crack once it dried on the pumpkin and thought this might help.

We also added a little bit of glitter after we were done painting which you can’t really see.

Once the paint was dry, I peeled away the letter and voila!  An adorable painted pumpkin!

Keeping with my fall mood today, I made a yummy Autumn meatless meal.

Butternut Squash Gnocchi!  I wish I could take credit for this tasty recipe but I got it from Iowa Girl Eats blog.  I’m obsessed with her recipes and all her amazing photos!

The only thing I did differently was added some red onion and vegan sausage into the butter/garlic sauce.

It took a long time to make and luckily I started early enough that I wasn’t slaving over it all evening and could still head to the gym for some cardio once the hubby got home.    All I had to do after my workout was boil the gnocchi and saute the sausage/sauce.   The hubby really enjoyed it and even polished off the leftovers for breakfast.  I always feel like a champion when I cook a meatless meal that he loves!  Score!

This morning we are off to meet a fellow blogger and her adorable little one for a play date in the park.  I think it’s another sweatshirt day!  Love it!

  2. Your pumpkin pie protein bites look SO good! I have a similar recipe with chocolate, peanut butter and oats, but I never thought to use pumpkin! I love the painted pumpkin idea, too! Keenan would enjoy that.

    It was great meeting you two today; I can’t wait to get together again!
