What I ate Wednesday

Happy Wednesday to you all!

Yesterday we had a very busy day running errands but I was happy to get them all done.  Well… not all of them.  Still a few things I need to do before the Bridal shower on Saturday.  In between working out and grocery shopping yesterday, I did manage to eat some food so I thought I’d link up with Jenn for What I ate Wednesday “Fall into good habits.”

Breakfast was eaten pretty quickly since we slept in a little and were trying to get out the door for bootcamp.  Between feeding the nugget, unloading the dishwasher and cleaning up, I ate a piece of flaxseed toast with a scrambled egg white mixed with avocado along side a bowl of nonfat greek yogurt, Fitmixer vanilla protein powder and strawberries.  Loving the Fitmixer protein!

On the way to the gym I drank a grape amino beverage for energy.

After the gym and my Fitmixer workout, I refueled my muscles with a Fitmixer vanilla protein shake.   (I forgot to snap a pic, sorry!)

A little later, when the Love Nugget woke up and I was ready to head out the door, I made a quick lunch.  A rice cake topped with a wedge of laughing cow cheese and a slice of herb roasted turkey.  I also sliced up an organic fuji apple which I ate in the car.

While in the checkout line of TJ’s the Love Nugget grabbed a tin of these little nibbles off the shelf while I wasn’t looking.

He slobbered all over them so… I had to purchase.  Darn.  I munched on a few while driving home.  Not bad.  Then again, what chocolate is?

Also at TJ’s, I stumbled upon this little container of goodness that the Love Nugget and I just had to try.

Pumpkin Greek yogurt.  Yum!  The only thing was that there were 23 grams of sugar.  Yikes!  That’s close to the total amount of sugar I should have in a day!  So I had two bites, gave the Love Nugget a few, then popped it back in the fridge.

After playing for a bit, I started to get hungry so I made a Fitmixer Slim chocolate banana smoothie with 1/2 a frozen banana, a scoop of chocolate Slim and 1 cup of unsweetened almond milk.

Don’t mind the Love Nugget begging in the background.  He really wanted some but had to settle with his water and peanut butter oat drop for a snack.

For dinner tonight I had planned to do grilled chicken but after a few nights of vegetarian meals, I decided to make the hubby his favorite chicken dish.  Baked Coconut Chicken with apricot dipping sauce.

I can’t remember where I got this recipe from, or how the original went but it’s super easy and pretty low-calorie.  Just chop organic chicken into chunks, dip into a mixture of panko crumbs and shredded coconut.  Place onto a baking sheet and bake for about 20 minutes at 350.  The dipping sauce is just apricot preserves and Dijon mustard.  So good!

We enjoyed it along side a spinach salad with walnuts, strawberries, and gorgonzola as well as some quinoa mixed with lentils.  Yummy and easy dinner!

A little while after dinner I wanted something sweet, so the hubby and I snacked on a little bit of kettle corn that I impulse bought at Trader Joe’s today.  Damn TJ’s and your goodies!

This morning I got up and did my Fitmixer workout which was a killer for my triceps!  Lots of push-ups and planks today!  Now the Love Nugget and I are off to the gym for spin.  Hope you all have a wonderful Wednesday!

QUESTION – What’s your TJ’s guilty pleasure?  I recently purchased some dark chocolate covered almonds with sea salt that should not have gone in my basket.  They are pretty yummy!

  2. The coconut chicken and the dipping sauce both sound awesome! I went to TJ’s on Monday and the roasted coconut strips were my best impulse buy of all time!

  5. I saw the pumpking yogurt at TJ’s today and wanted to buy it but opted for the mango flavor instead. even though the sugar amount is high, I still want to give it a try 🙂
