Tropical Traditions Giveaway

Hi Folks!

I broke down and baked some cookies the other day.  I’m glad I did though because they turned out to be REALLY good.  While I didn’t manage to make them fully sugar-free… I did keep the brown sugar to a minimum 🙂 I also used one of my favorite baking additions lately.  Coconut Oil!

Cherry, Coconut and Dark Chocolate Chip Cookies (It’s a mouthful but worth it!)

1 cup old-fashioned oats

1/2 cup whole wheat flour

1/2 cup flaxseed meal

1/2 tsp baking soda

1/8 tsp salt

1/3 cup shredded unsweetened coconut

1/2 cup brown sugar

1 egg

1/3 cup coconut oil

1/4 cup applesauce

1 tsp vanilla

1/3 cup chopped dried cherries

1/3 cup dark chocolate chips

Preheat oven to 350 degrees.  In a large bowl, sift together flour, oats, flaxseed meal baking soda, salt and coconut.  In a separate bowl, mix together the brown sugar, egg, applesauce and vanilla.  Add coconut oil to that mixture and stir well.  Mix the dry ingredients with the wet ingredients then stir in cherries and chocolate chips.  Drop onto a parchment lined baking sheet and pop into the oven for 12-15 minutes.

  1. I use coconut oil as a substitute a lot in my baking and cooking (which, sadly, has been minimal since baby number two arrived)! I always use it when scrambling eggs and I use it to saute veggies too!

  2. I would like to make granola with this.
