Happy Friday!

Good morning!

Happy Friday to you all!  Anything fun planned for the weekend?  We are looking forwards to a weekend at home with not much planned.  This hasn’t happened in quite a while so we are pretty excited.  Well, not too much includes an 11 mile run for the hubby and I, hopefully a picnic at the lake and then a trip to a berry farm with friends for some berry picking!  I’m most looking forward to that 🙂

Last night the hubby and I had a pretty mellow evening with an easy dinner.

Salad with spinach, roasted beets, goat cheese, toasted walnuts and strawberries for me.

Grilled tri-tip and salad for the hubby.

He was pretty stoked on his steak cooking last night.  “Cooked to perfection!”  Were his exact words.  I almost wanted to taste it…. okay, not really but glad he enjoyed it!

This morning for breakfast I wanted to fill up since I was planning on being gone until this afternoon.  The Love Nugget and I are heading to SS then hopefully to SkyZone for some jumping fun!  So I made a protein pancake recipe that turned out to be delish!  If you like this sort of thing 🙂

Protein Pancakes

1/4 cup old fashioned oats

1 egg white

1/2 tsp baking soda

1 scoop vanilla protein powder

2 tbsp nonfat greek yogurt

splash of almond milk

Mix all ingredients together in a bowl.  Cook in an oiled pan until lightly browned on each side.  Serve with whatever you’d like!  I topped mine with a scoop of Almond Sunflower Seed butter, bananas and a light drizzle of 100% pure maple syrup.  Very good and filling!  Yum!
