A while ago I promised a yummy recipe for a black bean quinoa salad. I’m finally getting it up on the blog 🙂
When we went to Micheal David to pick up our wine, we met a very nice gentelman who was selling honey.
Not just any honey, this was some really special honey. Flavored, GMO free Heirloom honey.
He had unique flavors like Whiskey, bacon, roasted marshmallow, and hot pepper.
The hubby and I tasted quite a few and even though I’m not a huge honey fan, I was quite impressed.
We ended up purchasing a bottle of the orange flavor and I started thinking about what to make for dinner that night.
This is what I came up with,
Black Bean Quinoa Salad
1 cup uncooked quinoa
1 cup rinsed black beans
1 diced avocado
1/3 cup chopped tomatoes
1/4 cup chopped red bell pepper
1/4 cup chopped red onion
1/4 cup chopped cilantro
For the Dressing
1 tbsp olive oil
juice from 1 lime
1/2 tsp cumin
1/2 tsp chili powder
1 clove chopped garlic
1 tbsp orange flavored honey (regular will work just fine)
Whisk all ingredients for the dressing and set aside. Rinse quinoa. Put Quinoa and 2 cups of water into a pot and bring to a boil. Reduce heat, cover and simmer for 10 mintues or until water is evaporated and quinoa is light and fluffy. Place into a bowl and put in the fridge to cool down. Once cooled, add all other ingredients to quinoa plus the dressing and stir well. Store in the fridge until ready to serve.
I topped mine with grilled shrimp marinated in this,
1 tbsp orange flavored honey
1 tbsp olive oil
1 tbsp cumin
1 tbsp chili powder
1 tbsp chopped garlic
Whisk ingredients, pour over shrimp then allow to marinade for at least an hour. Not too long or the lime will start to cook the shrimp!
The combination of the sweet honey, citrus and smoky chili powder is delicious!
