Tofu goodness

For dinner the other night, I wanted to try a new tofu recipe so the hubby had beef and I had this.  Although, once it was done the hubby tried it and really liked it!

Nut Butter Tofu and Broccoli Slaw

3 slices of extra firm tofu diced into chunks

1 tsp coconut oil

2 cups of broccoli slaw

Sauce ~

1 tbsp almond butter

1 tbsp all natural peanut butter

1 tbsp

1/4 cup of low sodium soy sauce

1 tbsp coconut sugar or brown sugar

1 tbsp rice wine vinegar

1/4 cup of water

1/4 cup of chopped raw cashews or peanuts

Heat oil in a medium frying pan and add tofu.  Cook until lightly browned on each side.  Meanwhile, blend ingredients for sauce in a blender or food processor until smooth.  Add 1/4 cup of sauce to cooked tofu toss and remove from heat.  Mix the rest of the sauce with the broccoli slaw in a medium bowl.  Top with chopped cashews or peanuts and the cooked tofu.  Enjoy!
