Mimosa???? Yes please!

We had a great Sunday over here!

My cousin and one of my dear friends came over for brunch.  I made mini egg fritattas and “tried” to make a new muffin recipe.


The muffins didn’t turn out, but luckily my wonderful cousin brought a scone mix that I threw together.  It’s always a bummer when something you cook doesn’t turn out.  Oh well!  We also had some yummy fruit and mimosa’s!    The love nugget ate an omelet and some sweet potatoes while we enjoyed our food.  Perfect brunch for a nice sunny Sunday morning.

I made two different kinds of fritattas today.  One had sautéed zucchini, green onions, jerusalum artichokes, red bell peppers and cheddar cheese.  The other had sautéed asparagus, mushrooms, spinach and goat cheese.  Both were yummy!

Mini Frittatas

3 whole eggs and 8 egg whites

2 tbsp milk or non dairy milk

1-2 cups of sautéed vegetables such as zucchini, onions, bell peppers, asparagus, mushrooms, broccoli etc.

1 cup of grated cheddar cheese or 1 cup of crumbled goat cheese

Preheat oven to 400 degrees.  Lightly spray muffin tins with cooking spray.  Add sautéed veggies evenly into muffin tins and top with cheese.  In a bowl, whisk together eggs, egg whites, milk, salt and pepper.   Pour eggs evenly over vegetables and bake for 25-30 minutes.

After everyone left we cleaned up, did some meal planning for the week, made the hubby some granola bars and made a batch of  wheat thins.  I found some cute little cookie cutters the other day at Hobby Lobby so I used them to cut out some wheat thins for the love nugget.  Cute!

The hubby said this batch turned out a little better than the last batch.  Pretty close to real wheat thins!


I tried out a new granola bar recipe for the hubby and it turned out to be good!

Chocolate Chip Peanut Butter Granola Bars 

3/4 cup raw Almonds

3/4 cup raw walnuts

1/2 cup quick cooking oats

3 pitted chopped dates

1/3 cup agave nectar

1 tsp vanilla

1/4 cup dark chocolate chips

Put almonds and walnuts into the food processor and pulse until chopped but chunky.  Add in dates and pulse a few more times.  Pour nut and date mixture into a mixing bowl and add in the rest of the ingredients.  Mix well then pour into a parchment lined loaf baking dish.  Press evenly and pop into the fridge for at least an hour to set.  Slice then wrap individually and keep refrigerated.

When the hubby got home from snowboarding we took the fam to the dog park.  Home just in time for the love nugget’s dinner and bath.   He and I both have been loving steamed baby carrots so we had a lot of those tonight 🙂

For dinner I had left over cauliflower pizza and the hubby had beef burgers.  Pretty low key night.
